Celebrating Father's Day with Sofitel Manila Featuring Dad's Favorite Dishes of Spiral's Master Chefs


This June, its time to honor the fathers and the food they love. Sofitel Philippine Plaza Manila will highlight Father's Day by having their Master Chefs present their own father's favorite dish on June 15 to 17, 2018 at Spiral.

Chef Bryan Ortigosa, Filipino Food Master Chef will be offering  Sinuglaw. Sinuglaw is a combination of words of Sinugba (grilled) and Kinilaw (eaten raw) and it has been a memorable dish for Chef Bryan. During his childhood days, his father would take him to the market where they would buy and eat a whole fish and would grill half of the fish and would make 'kinilaw' the other half of the fish.

Chef Halim Ali Khan, Spiral's Indian Master Chef, will showcase an Indian dish that his father taught him to make. Cooking Sikandari Raan (Roast Lamb), the lamb leg should be marinated overnight and slow cooked a day then baked into an oven for that tender, easy to tear apart and fall off the bones lamb dish as his father instructed him. With 10 to 12 Indian spices partnered with Biryani rice soaked with lamb stock, it will be a juicy and flavorful pairing.

Chef Dennis Macaranas, a Thai Food Master Artisan, will add his twist to the Bangkok-style beef tenderloin adding 5 aromatic Thai spices for that distinct tangy and extra flavor. He was inspired to create this dish similar to bistek (beef steak) that has been their pulutan (snacks when drinking alcoholic beverages) and bonding time with his father as they drink together.

Chinese Master Chef Michael Tai shared his father's creation called Dragon Balls Lettuce. It is made up of seafood balls wrapped in lettuce and its his father's way of making him eat vegetables as a kid by disguising his favorite seafood in this dish.

Chef Masaaki, Spiral's Japanese Master Chef, shared that he and his father loves beer. He incorporated the beer flavor to the chicken karaage which they both love.

Steak a Cheval will be the dish that French Master Chef  Julien Cosse will serve at the Father's Day Weekend Brunch. This dish is made up of steak with a sunny side up egg on top with fries. He shared that his dad would spend sleepless nights working and he would eat the steak with egg to give him the stamina and energy.

Ideal for Soju, Bossam (a Korean pork dish that you can wrapped with vegetable leaves and adding Korean spices and bean paste) will be the Korean dish that Korean Master Chef Lorvic Gesite will add to the Father's Day Weekend Brunch.

Remembering his dad's sweet tooth and love for Bourbon, Pastry Chef Rolando Macatangay will be presenting the smooth and decadent Chocolate Mudslide Cake infused with Bourbon. He shared that his father liked the cake but was wondering why his Bourbon was gone.
