Got to check out what Spiral Manila is offering on their French week and got to sample French cuisine. This is my first time actually savoring food from France and was looking forward to experiencing new cuisines.

This July, Sofitel Philippine Plaza Manila lets you travel across the five gastronomic regions of France from the 9th to the 15th of July 2018 with Bienvenue Au Terroir. Featuring Spiral’s very own French Master Chef Julien Cossé, Sofitel celebrates the rich gastronomic history of France with special culinary offerings showcased in a week-long homage of l’art culinaire Français deliciously accompanied by a premier wine selection and bespoke French cocktails.

Northwest France marked by Normandy is best known for its apples, which are used to make cider and calvados; seafood such as mussels and oysters; and Norman cheeses like camembert, livarot, pont- l'Évêque, Brillat-Savarin, neufchâtel, petit Suisse and boursin. Its neighboring region, Brittany is well known for its succulent crêpes that dot every street corner.

Northeast France is marked by Alsace and Lorraine, best known for its culinary staples of potatoes, cabbage and beetroot. Smoked bacon is also a signature food item used in traditional dishes in the region such as the rich and flavorful quiche lorraine. Alsatian cuisine, which is heavily rooted from Germanic culinary traditions highlights the use pork as demonstrated in the traditional baeckeoffe, flammekueche, choucroute and fleischschnacka. As a wine region, Alsace is popular for its production of dry Rieslings and recognized globally as the birthplace of the said varietal.

The Bourgogne and Franche-Comté region located in eastern France boasts of culinary treasures including Comté cheese and vin jaune (yellow wine) and local specialties such as smoked ham and sausages. Burgundy is known for the staple, beef bourguignon and is renowned as one of France’s top- producing wine regions. With red and white wine varieties mostly made from pinot noir and chardonnay grapes respectively, it also presents other types of grapes such as gamay, aligote, pinot blanc and sauvignon blanc.

The French Mediterranean region located in the southeast of France is marked by cuisine from Provence Occitania and the island of Corsica. Popular for using fresh ingredients citrus, vegetables, fruits and herbs, Provence-Aples-Côte d’Azur is know for staple dishes such as bouillabaisse, salad Niçoise and ratatouille. Corisca is abundant with goat and sheep hence lamb is traditionally prepared with dishes such as stufato, ragouts and roasts. Brocciu cheese made from a combination of ewe’s milk and whey are similarly a staple from Corsica.

Southwest France marked by Bordeaux, Aquitane, Périgord, Gascogne and the Basque Country highlights rich ingredients such as duck, lamb, prunes, oysters, mushrooms and truffle. Its specialties include the flavorful foie gras, confit de canard (duck confit) and pruneaux d’agen (dried plums). Bordeaux is prestigious for its rich red wine with certain areas producing specialty grapes.

Sofitel Philippine Plaza Manila celebrates French Week with special offerings from the 9th to the 15th of July 2018 featuring Spiral’s very own French Master Chef Julien Cossé. Feast on succulent regional French specialties including fish dieppoise, mussels à la Normande, chicken breast à la Normande, apple and camembert salad and tarte tatin from Northwest France; choucroute, salmon in Riesling sauce, asparagus and zucchini terrine and apple strudel from Northeast France; snails cassolette with Chablis wine sauce, terrine forestière and red wine poached pear from Bourgogne and Franche-Comté; bouillabaisse, daube Provençale, pissaladierie, nicoise salad and lavender crème brûlee from the Mediterranean region; duck supreme and foie gras skewers, landaise salad and Basque cake with custard from Southwest France.

Sofitel Philippine Plaza Manila’s Le Bar presents a rich selection of the finest cheese, charcuterie, wines and pastries in an idyllic resonance of La Grande Epicerie de Paris. A venue of sinful indulgence to shop for the most decadent of sweet and savory culinary pleasures, Le Bar’s Grand L’Epicerie will be
available from the 9th to the 15th of July 2018.


VOYAGE DU VIN FEATURING FRENCH WINES AT SOFITEL PHILIPPINE PLAZA MANILA

Discovery the sensory world of wine as Sofitel Philippine Plaza Manila takes you on a journey through rich wine regions of France with The Art of Wine. Featuring Sofitel’s French wine connoisseur Tanguy Gras, be part of an afternoon of flavorful discoveries and premier wine pairing. Join this enriching wine
exploration on the 12th  of July 2018 at the Spiral Hidden Room, 4pm. Rate is set at Php2,000 per person, inclusive of applicable government taxes and service charge. Limited seating available. Kindly book early to guarantee seating.


BASTILLE DAY AT SOFITEL PHILIPPINE PLAZA MANILA

In commemoration of historic Bastille Day, Spiral’s culinary artisans mesmerize eager gastronomes with a sumptuous selection of signature French specialties on the 14th of July 2018. The celebration features live musical entertainment and a complimentary round of bloody revolutionary cocktail. A magnifique
poolside fireworks display adds color to the majestic sky in culmination of the annual celebration.


Dine at Spiral on Bastille Day Weekend you may get a chance to win a handbag by Lipault and featured prizes from Guerlain.


Lunch is available at Php2,750 per person and dinner at Php3,500 per person. Rates are inclusive of applicable government taxes and service charge.


Sunset Bar
