Named after the traditional Provençal condiment of puréed olives, capers, anchovies and olive oil, Tapenade celebrates the rich, bold, and summery flavors of the Mediterranean region – from the seaside fishing villages of the French coast, the terroir of the Italian countryside, the sunny isles of Greece, and the exotic landscapes of Turkey and Morocco.

Ideal for lively group dining, the menu’s starter section features tapas, antipasti and mezze; best enjoyed with great company.  True to its name, Mozzarella & Friends is the perfect pairing of mozzarella with basil pesto, black olive tapenade, romesco dip and fruit mostarda.  Served tableside, Prosciutto & Company includes an assortment of cantaloupe melon, fresh mango, and asparagus; all of which complement slices of prosciutto perfectly.

Taking inspiration from the Mediterranean isles and seaside flavors, Tapenade introduces seafood dishes cooked with flavorful ingredients.  Sample Shrimps en Gambardina, Spanish-style tempura served with Guindilla aioli dip.

Guests looking for pasta dishes are presented with new specialties brimming with familiar and comforting flavors, such as the Rigatoni al Sugo cooked with Italian guanciale, fennel sausage and smoked bacon with tomato sauce, and the Salmon Linguini with dill cream sauce and fresh spinach.

Known to elevate the classic paella into comforting and nourishing delicacies, Tapenade introduces the Wagyu Beef & Mushroom Paella, a crowd favorite with generous servings of pan-fried rice topped with luscious strips of premium Wagyu beef.  Another must-try creation is the Roast Chicken & Chorizo Paella cooked with green beans and rosemary.

The dessert menu presents delightful treats made with the freshest ingredients. Not to be missed are the restaurant’s new sweet endings: Strawberry Crème Brûlée Cake with white chocolate custard, strawberry sphere, and champagne sugar crystals.  Or, tuck into the Chocolate Tart with olivo fleur de sel, chocolate truffle, and raspberry kisses; and the Almond and Caramel Bar with dacquoise, sesame nougat, and amaretti crunch.

Guests exploring the restaurant’s new menu are also invited to revisit the Salad Room, enhanced to make guests’ dining experiences healthier and more enjoyable.  The spread features a fine selection of local and imported produce, charcuterie, cheeses, chilled seafood, composed salads, and playful sandwiches; available daily during lunch and dinner for PHP 988++ per person.  Price is subject to taxes and service charge.
